The Certificate in Classic Cooking (Micro-credential) is a hands-on evening course designed to introduce essential cookery techniques rooted in French culinary tradition, while also embracing Asian influences relevant to contemporary Aotearoa New Zealand. Participants learn practical skills for preparing a variety of classic dishes, practice food safety, understand cooking terminology and methods, and develop efficient kitchen planning. The programme features a strong foundation in vegetable cookery, nutrition, and allergen awareness, culminating in practical and theoretical assessments. Upon completion, learners are equipped with foundational skills and confidence to continue in professional cookery studies.
