The Certificate in Cookery, Advanced Level 4 builds upon foundational cookery knowledge to develop specialist skills and greater confidence. Delivered over 36 weeks full time, the programme covers classic and contemporary dishes, kitchen management, menu costing and design, food safety, and introduces wine and spirits in cookery. The course includes hands-on training across meats, poultry, seafood, vegetables, menu planning, and employment law, with 60–80 hours of work placement in leading Auckland hospitality venues. Graduates are equipped for entry-level chef roles and further study in professional cookery or wine knowledge.

Gain hands-on experience in menu planning, costing, nutrition, and commercial kitchen setup.

Apply industry-standard food safety procedures and understand employment law and teamwork principles in hospitality.
Or equivalent prior cookery qualification/experience
