What You're Signing Up For
This programme is ideal for those aspiring to manage restaurants, coordinate events, or pursue a career in hospitality management. Students develop professional-level skills in food and beverage service, customer relations, health and safety, compliance, food safety, leadership, and teamwork. Training is provided in real-world environments, including UCOL's commercial restaurant, and includes practical industry experience. Graduates will be equipped for roles in restaurants, cafés, and bars, and have the foundation for advanced careers or further study in hospitality.
Course Content
- Hospitality Service Standards: Hazard management, health and safety, food safety, security standards, customer service skills, communication (oral, written, visual), feedback, interaction with colleagues and customers.
- Restaurant Food Service: Menu design and knowledge, dietary requirements, table service, oversight of food service, methods of payment, operating policies and procedures, work roles and compliance.
- Restaurant Beverage Service: Legislative requirements (Sale and Supply of Alcohol Act, Health and Safety at Work Act, Fire Service Act, Trespass Act, Building Act, Maori Community Development Act), host responsibilities, management of licensed premises, beverage service (hot beverages, wines, beers, spirits), cocktail mixology.
